Near Colombia's San Antonio Village, El Madrigal is a high elevation farm managed by long time grower Hector Jojoa Insandara. It was fully replanted just eight years ago, which, along with improved irrigation, tree shading, and a new plant nursery, has improved quality considerably. Knowing the benefits biodiversity, Hector also grows bananas, tangerines, mangos, and more on this land, even cultivating honey!
Along with custom-built drying tables, fermentation tanks, and water channels, Hector uses a unique washing process involving handpicking fully ripe cherries, drying them on tables for four hours, then moving them to large BPA-free buckets for 15-hour wet fermentation. Everything on El Madrigal is done manually by Hector, his family, and their neighbors. Hector’s longterm goal is sending his children to school in Pasto, and eventually university. We've worked with Hector in the past and are thrilled to offer his coffee once again.
