We’re excited about the opportunity to showcase a producer that puts so much emphasis on giving back to the coffee community and the planet. Founded in the 80’s when sustainability was virtually unknown, the Daterra Coffee Project continues to be entered around social development and environmental preservation.
Daterra’s land is broken up into a series of 216 mini farms ranging from 5-15 hectares each. Each of the terroirs on the farm are harvested individually, based on their optimal cherry maturation. The cherry are picked and sorted using unique technology that ensures that each cherry is sorted correctly, a technology that took them over 10 years to develop.
Cerrado has unique weather traits where the weather is very dry and stable during harvest. This allows Daterra to process this coffee in what is known as “Cerrado natural”. This process means that cherries are left on the tree for a long time, allowing them to go through the full maturation process and dry while still attached to the branch. Obviously this method of processing only works in regions with hot & stable weather conditions like Cerrado. Tree dried naturals usually show heavy body and extra-intense sweetness.
