We're very happy to have El Recuerdo back once again!
One of our longest relationship coffees in Colombia, it always brings a smile to our face to see this coffee come into the roastery.
In Pitalito, Colombia, Carlos Maro Guamanga (with his wife Patricia) is always working innovatively on his farm El Recuerdo to grow fantastic tasting Caturra. We like working with Carlos because as well as being a producer, he is also very involved in roasting and cupping his coffee. This isn’t very common in coffee-producing, but you can feel the benefits of it in the cup.
Carlos is always willing to experiment with different processing methods, varieties, and fermentation times. He is also ecologically minded, using natural spring water found on El Recuerdo in his coffee processing. Constantly refining the equipment and techniques used in his growing practices, we’re happy to be working with such an entrepreneurial and forward-thinking producer.
Ratio: 1g coffee to 16-17g water / Slurry temperature (coffee+water): 200 - 205 ̊F – 93 - 96 ̊C / Extraction: 20 - 21% / TDS 1.38-1.41%
